  • 4 pieces Chicken Thighs Juicy and flavorful; chicken breasts can work as well.
  • 1 teaspoon Salt Essential for bringing all the flavors together.
  • 1/2 teaspoon Black Pepper Adds a subtle heat.

For the Slaw

  • 4 cups Shredded Cabbage Provides crunch and a pop of color.
  • 2 medium Carrots Brightness and sweetness; radishes can be a fun swap!
  • 1 medium Thin Apple Slices Adds a fresh, crisp bite; choose any crunchy variety!
  • 1/4 cup Apple Cider Vinegar Brightens the slaw with a tangy finish.
  • 1 teaspoon Celery Seeds Optional; adds a unique flavor to the slaw.
  • 2 tablespoons Fresh Herbs Optional garnish; parsley or chives adds a fresh touch.

Instructions
 

Preparation

  • Gather all your ingredients on the counter.
  • Slice the apple thinly and shred the cabbage and carrots.
  • Minced garlic should be ready to add flavor!
  • Set a large bowl aside for the slaw mix.

Cooking

  • In a skillet, heat some oil over medium heat.
  • Season the chicken thighs with salt and pepper, then sear them for about 5-7 minutes on each side until golden brown.
  • In a separate bowl, mix apple cider, honey, mustard, and garlic; pour it over the chicken once it’s browned.
  • Let it simmer until the chicken is cooked through, about 10 minutes.

Serving

  • Prepare the slaw by tossing together cabbage, carrots, apple slices, and apple cider vinegar.
  • Add in celery seeds if using and mix well.
  • Plate the chicken and pour some of that delicious sauce over the top.
  • Serve alongside the fresh autumn slaw and enjoy!

Notes

For best results, marinate chicken overnight in apple cider. Can be made ahead and stored for leftovers.
