Preparation

  • Slice green onions thinly, separating the white and green parts.

Cooking

  • In a pan over medium heat, cook the chicken breasts for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C).
  • Season chicken with salt and pepper while cooking to enhance flavor.
  • Pour Sriracha ranch dressing over the chicken during the last couple of minutes and let it warm through.
  • In another pan, sauté the chopped mixed vegetables for about 5 minutes until tender but still vibrant.

Serving

  • Slice the cooked chicken breasts into strips for easy serving.
  • Layer the cooked rice in bowls, followed by sautéed vegetables.
  • Top each bowl with sliced chicken and drizzle with any remaining Sriracha ranch dressing.
  • Finish with chopped green onions and a sprinkle of sesame seeds.
  • Serve immediately while warm.

Notes

For extra crunch, consider roasting your vegetables instead of sautéing. Store bowls separately to maintain freshness during storage.
