Filling Ingredients

  • 2 cups Fresh Spinach, Chopped Lightens up the dish and adds a nutrient boost.

  • 1/2 tsp Pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • Cook the lasagna noodles as per the package instructions until al dente, then drain and cool slightly.
  • In a bowl, mix ricotta, spinach, egg, salt, and pepper.

Cooking and Assembly

  • Spread a layer of marinara sauce on the bottom of a baking dish.
  • On each noodle, spread a generous amount of the ricotta-spinach mixture.
  • Roll up each noodle tightly and place seam-side down in the baking dish.
  • Top with more marinara sauce and sprinkle with mozzarella and Parmesan.

Serving

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for another 10-15 minutes, until bubbly and golden.
  • Let it rest for a few minutes before serving, and enjoy the gooey deliciousness!

Notes

You can prepare the rolls ahead of time and store them in the fridge until you’re ready to bake. For added flavor, mix in garlic or onion to the ricotta.
