Preparation

  • Preheat your oven to 350°F (175°C). This ensures your cake bakes evenly.
  • Grease a 9-inch round cake pan with butter and lightly dust with flour to prevent sticking.
  • In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In another bowl, cream the softened butter and brown sugar until fluffy and light, about 3 minutes.
  • Add the eggs and vanilla extract, mixing well until combined.

Cooking

  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
  • Fold in the diced pears and walnuts, if using, ensuring even distribution throughout the batter.
  • Pour the mixture into the prepared cake pan, spreading it evenly.
  • Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

  • While the cake cools, prepare the brown sugar glaze by melting brown sugar and mixing until slightly thickened.
