  • 1 whole whole turkey (10–14 lbs) Offers a sizable serving for gatherings.

  • 1 teaspoon black pepper Provides a subtle kick.
  • 2 teaspoons garlic powder Adds depth to the seasoning.
  • 1 teaspoon paprika Contributes additional flavor and color.
  • 1 teaspoon dried thyme or rosemary For herbal notes.
  • 1 lemon, sliced Adds brightness and moisture.
  • 1 onion, sliced Infuses flavor into the turkey and cooking juices.
  • 4–5 cloves garlic Enhances savory taste.
  • Fresh herbs (thyme, rosemary, parsley) For garnishing and flavor.
  • 1 cup chicken broth (optional) Helps create a delicious base for gravy.

Instructions
 

Preparation

  • Pat the turkey dry with paper towels and place it breast-side down.
  • Using kitchen shears, cut along both sides of the backbone and remove it.
  • Flip the turkey over and press firmly on the breastbone until it cracks.
  • Mix olive oil (or butter), salt, pepper, garlic powder, paprika, and thyme; rub it all over the turkey.
  • Layer onions, lemon slices, garlic, and herbs at the bottom of the roasting pan; place the turkey on top.

Cooking

  • Cook the turkey at 425°F (220°C) for 70–90 minutes, depending on size.
  • Insert a thermometer into the thickest part of the thigh; it should reach 165°F (74°C).
  • Let the turkey rest for 15–20 minutes before carving.

Notes

Tip: Baste the turkey every 30 minutes for added moisture and flavor. Marinating the turkey overnight improves flavor.
