Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion, red, and green bell peppers. Sauté for about 5-7 minutes until they soften and are fragrant.
  • Add minced garlic and stir for another minute until it becomes aromatic.

Cooking and Assembling

  • Stir in the rinsed black beans, frozen corn, and diced tomatoes along with their juices.
  • Season with chili powder, cumin, oregano, salt, and black pepper. Cook for an additional 5 minutes, allowing flavors to meld.
  • Layer half of the corn tortillas in a greased casserole dish, followed by half of the bean mixture. Sprinkle with half of the cheese.
  • Repeat the layers, finishing with the remaining cheese on top.

Serving

  • Bake the casserole in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  • Once cooked, remove from oven and let it sit for 5 minutes.
  • Sprinkle with fresh cilantro before serving, and enjoy the heartwarming flavors!

Notes

For extra crunch, consider adding crushed tortilla chips on top during the last few minutes of baking. Make sure to use fresh ingredients for the best flavor. Store leftovers in an airtight container for easy reheating throughout the week.
