For the Burgers

For the Avocado Topping

  • 2 ripe avocados Provides creaminess.

Preparation

  • Make the avocado topping by combining all ingredients in a mixing bowl. Taste and adjust seasoning with salt and pepper. Chill before serving.

Cooking

  • Preheat the grill on the highest heat setting until smoking hot.
  • In a mixing bowl, combine ground beef, chorizo, Worcestershire sauce, dried onion, and garlic. Mix until just combined and form into patties.
  • In a flat dish, mix salt, smoked paprika, cumin, dried cilantro, and cayenne pepper. Coat both sides of each patty with the spice mix.
  • Grill burgers on high heat for about 2 minutes per side, then turn heat to medium-low and continue grilling over indirect heat for an additional 4-6 minutes. During the last minute, toast buns cut side down on the grill.

Serving

  • Remove burgers and buns from the grill, cover the meat with foil, and let it rest for about 5 minutes.
  • Assemble the burgers by topping with the avocado mixture and enjoy!

Notes

Let burgers rest after cooking to redistribute juices for a juicier product. Experiment with different cheeses melted on top for added flavor.
