Preparation

  • Prepare the Avocado Topping: In a mixing bowl, combine all ingredients for the avocado topping. Taste and season with additional salt and pepper as desired. Chill before serving.

Cooking

  • Preheat the Grill: Preheat the grill on the highest heat setting until smoking hot.
  • Mix the Meats: Place ground beef in a large mixing bowl, then add chorizo torn into small pieces.
  • Add the Seasonings: Add Worcestershire sauce, dried onion, and garlic. Mix until just combined and form even patties.
  • Coat the Burger Patties: In a flat dish, combine salt, paprika, cumin, cilantro, and cayenne pepper. Coat both sides of each burger with the spice mix.
  • Grill the Burgers: Grill burgers on high heat for about 2 minutes per side.
  • Finish Grilling: Turn the heat to medium-low and remove the burgers from direct heat. Continue to grill over indirect heat for an additional 4-6 minutes.
  • Toast the Buns: During the last minute of grilling, place the buns cut side down on the grill to toast.
  • Rest the Burgers: Remove buns and burgers from the grill to a foil-lined baking sheet. Cover the meat with foil and allow to rest for about 5 minutes.
  • Serve: Top burgers with the avocado mixture and enjoy!

Notes

For best results, do not overmix the meat mixture. Ensure you let the burgers rest after cooking to retain juices. Use a meat thermometer for perfect doneness.
