Instructions
 

Preparation

  • Cook 1 cup of rice according to package instructions and set aside to cool.
  • Slice ½ red onion and rinse 1 cup of black beans and ¾ cup of corn kernels.
  • Chop the boneless chicken breasts into bite-sized pieces.

Cooking

  • In a skillet over medium heat, cook the chicken pieces for 6-8 minutes until golden brown and cooked through.
  • Add sliced red onion and cook for an additional 2 minutes.
  • In a large mixing bowl, combine cooked rice, black beans, corn, and chicken mixture. Season with salt and pepper.
  • Lay out tortillas and evenly distribute the filling in the center of each.

Serving

  • Fold in each end of the tortilla and roll tightly to create a wrap.
  • Slice the wraps diagonally and serve with sour cream and extra Cotija cheese.

Notes

For best results, prepare ingredients beforehand. Use fresh tortillas and let rice cool before assembly. Experiment with different cheese for unique flavors.
