Preparation

  • Gather all your ingredients to keep your workspace organized.
  • Wash and chop the romaine lettuce, then place it in a large mixing bowl.
  • Rinse and drain black beans; set aside in a separate bowl.
  • Dice the avocado and halve the cherry tomatoes.
  • Thinly slice the red onion and chop the cilantro for garnishing.

Assembly

  • In your prepared mixing bowl, combine the chopped romaine, shredded chicken, corn, black beans, diced avocado, halved cherry tomatoes, and red onion.
  • In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper until well blended.
  • Pour the dressing over the salad and toss gently until everything is coated evenly.
  • Sprinkle shredded cheddar cheese and chopped cilantro on top for added flavor.
