Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Gather all your ingredients on a clean workspace.
  • In a large bowl, combine the shredded chicken with the green chile sauce, ensuring the chicken is well-coated.
  • Warm the tortillas in a microwave for about 10-15 seconds to make them pliable.

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Add the chicken mixture and cook for about 5 minutes until heated through.
  • Remove from heat and layer approximately 1/4 of the chicken mixture and some shredded cheese onto each tortilla.
  • Roll up each tortilla tightly and place them seam side down in a baking dish.
  • Top with the remaining green chile sauce and cheese.

Baking

  • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for another 10 minutes until the cheese is bubbly and golden.
  • Let cool slightly, and garnish with sour cream before serving.

Notes

For creaminess, mix sour cream into the chicken. You can use whole grain tortillas for added fiber. Store leftovers in airtight containers for up to 3 days or freeze for up to 2 months.
