Preparation

  • Step 1: Gather fresh lemon juice, tahini, and kosher salt in a food processor or blender.
  • Step 2: Blend until smooth, resembling peanut butter, starting at low speed for about one minute.
  • Step 3: With the motor running, stream in ice water and process until creamy and light in color, scraping sides as needed.
  • Step 4: Add the cooked chickpeas and blend until fully incorporated and smooth, adjusting seasoning as desired.
  • Step 5: Taste and adjust saltiness and lemon, adding more if necessary; it will thicken as it cools.
  • Step 6: Heat olive oil in a skillet, add additional chickpeas, cooking until sizzling and slightly colored.
  • Step 7: Toss the chickpeas with spices and flaky sea salt, then set aside.

Notes

For best results, process tahini and lemon juice until smooth before adding other ingredients. Allowing hummus to chill enhances flavor. Store in an airtight container for freshness.
