Instructions
 

Preparation

  • Dice one onion and mince two cloves of garlic and one tablespoon of ginger.
  • Gather the rest of your ingredients, including the chicken thighs, coconut milk, diced tomatoes, curry powder, soy sauce, salt, and pepper.
  • Prepare your slow cooker by greasing it lightly or using a liner for easy cleanup.

Cooking

  • Place the chicken thighs at the bottom of the slow cooker.
  • Add the diced onion, garlic, and ginger on top of the chicken.
  • In a bowl, mix the curry powder, coconut milk, diced tomatoes, and soy sauce until combined, then pour this mixture over the chicken and onions.
  • Season with salt and pepper to taste.
  • Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours.

Serving

  • Once the cooking time is complete, check that the chicken is tender and fully cooked.
  • Using forks, shred the chicken directly in the slow cooker, allowing it to absorb more of the sauce.
