Instructions
 

Preparation

  • Generously season the chicken thighs with salt and pepper.
  • Heat a large nonstick skillet over medium-high heat and coat with cooking spray or olive oil.
  • Add the chicken and cook until browned, about 3-4 minutes per side, creating a beautiful crust.
  • Transfer the chicken to the slow cooker.
  • Reduce the heat under the skillet to medium and add more cooking spray or oil.
  • Add garlic and onion and cook until soft, about 3-4 minutes.
  • Transfer to the slow cooker.

Cooking

  • Add crushed tomatoes, bell peppers, mushrooms, thyme, and bay leaves to the slow cooker.
  • Stir well to combine all flavors and ingredients together.
  • Cover and cook on high for 4 hours or low for 8 hours.
  • Once cooked, discard the bay leaves. Pull the chicken meat from the bones, shred it, and return it to the sauce.
  • Stir in the freshly chopped parsley for a burst of color and flavor.
  • Serve over pasta, polenta, or spaghetti squash, and top with grated Parmesan cheese.

Using a slow cooker not only saves time but also enhances the flavors of the dish. Make sure to season the chicken generously with salt and pepper before cooking.
