Instructions
 

Preparation

  • Generously season the chicken with salt and pepper.
  • Heat a large nonstick skillet over medium-high heat. Coat with cooking spray or a drizzle of olive oil.
  • Add the chicken and cook for about 3-4 minutes per side until nicely browned, then transfer to a slow cooker.
  • Reduce the heat under the skillet to medium.
  • Add more cooking spray or olive oil, followed by the garlic and onion. Cook until soft, about 3-4 minutes, stirring occasionally. Transfer to the slow cooker.

Cooking

  • Add the crushed tomatoes, bell peppers, mushrooms, thyme, and bay leaves to the slow cooker. Stir well to combine.
  • Cover and cook on high for 4 hours or low for 8 hours. The chicken will become fork-tender as it cooks.
  • Once cooked, discard the bay leaves. Transfer the chicken to a plate, shred the meat, and return it to the sauce.
  • Stir in the fresh parsley and serve with pasta, polenta, or spaghetti squash, topping with grated Parmesan cheese.

Notes

For extra depth, add a splash of red wine with the tomatoes. Incorporate additional vegetables such as carrots or spinach to boost nutrition. Make it a freezer-friendly meal by prepping all ingredients in advance and storing them in a freezer bag.
