Vegetable Ingredients

  • 2 medium yellow onions (sliced) Forms a key flavor base.
  • 5 cloves garlic (minced) Fresh garlic gives depth.
  • 4 medium carrots (cut into 1-inch pieces) Hold their shape without getting mushy.
  • 1 pound Yukon gold potatoes (diced) Adds heartiness.

Seasoning and Thickening

  • ¼ cup all-purpose flour Thickens the broth naturally.

Instructions
 

Preparation

  • Pat the beef dry with paper towels.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the beef in batches until browned, about 3-4 minutes on each side.
  • Remove beef and add sliced onions and garlic to the skillet. Sauté until softened, about 5 minutes.

Cooking

  • Place the seared beef in your slow cooker.
  • Sprinkle the flour over the meat; stir gently to coat.
  • Add the sautéed onions and garlic, along with tomato paste, broth, diced tomatoes, Worcestershire sauce, and herbs.
  • Layer in the carrots and potatoes. Season with salt and pepper.
  • Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is fork-tender.

Serving

  • About 30 minutes before serving, stir in the frozen peas.
  • Taste and adjust seasoning if necessary.
  • Ladle your delicious stew into bowls, and feel free to top with fresh parsley for a hint of brightness.

Notes

Sear the beef for depth of flavor. Use fresh herbs for brightness. Swap broth with red wine for richer taste. Store leftovers properly and freeze for future meals.
