  • 1 medium Carrot Provides sweetness and crunch; sliced.

Instructions
 

Preparation

  • Cut the beef into bite-sized pieces.
  • Prepare the vegetables: mince the garlic, peel, and thinly slice the carrot, and chop the green onion.
  • In a bowl, combine soy sauce, miso paste, minced ginger, garlic, and a dash of salt and pepper.
  • In the slow cooker, layer the beef at the bottom, followed by the sliced carrot and the broth mixture.

Cooking

  • Pour the beef broth and water into the slow cooker over the layered ingredients.
  • Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  • About 20 minutes before serving, add the ramen noodles to the cooker and gently stir to combine, allowing them to soften.
  • Once the beef is fork-tender and the noodles are cooked, taste and adjust seasoning as necessary.

Serving

  • Once cooked, serve hot in bowls.
  • Top with chopped green onions and perhaps a drizzle of extra soy sauce for added flavor.
  • Enjoy this heartwarming dish while it’s still steaming.

Notes

For extra depth, consider browning the beef in a pan before adding it to the slow cooker. Use low-sodium beef broth to manage salt content better. Add other vegetables like bok choy or bell peppers if desired for more nutrients. Store leftovers in sealed containers for freshness.
