Instructions
 

Preparation

  • Lay the skirt steak on a clean cutting board.
  • Sprinkle the kosher salt and freshly ground black pepper evenly over the meat, ensuring a nice coating for flavor.
  • Massage the seasonings into the meat for about 1 minute to enhance the taste.
  • Let the steak sit at room temperature for 15–20 minutes.

Cooking

  • Preheat your grill or skillet over medium-high heat (approximately 400°F or 200°C).
  • Place the skirt steak on the hot grill or skillet.
  • Cook for 3–4 minutes on each side for medium-rare doneness, or until an internal temperature of 130°F (54°C) is reached.
  • Remove the steak from the heat and let it rest for 5 minutes.
  • Slice against the grain into thin strips.

Serving

  • Arrange the sliced skirt steak on a serving platter.
  • Spoon generous amounts of chimichurri sauce over the top.
  • Serve alongside a fresh salad or grilled vegetables for a complete meal.

Notes

For best results, choose skirt steak with good marbling for added flavor and tenderness. Store leftovers in an airtight container in the fridge for up to 3-4 days.
