Preparation

  • Gather all your ingredients and chop the onion and garlic finely.
  • Drain and rinse the butter beans in a colander.
  • Prep your workspace by having the vegetable broth and spices within arm's reach.

Cooking

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Stir in the paprika and thyme, allowing the spices to bloom for about 30 seconds.
  • Add the butter beans and vegetable broth to the pot. Season with salt and pepper to taste.
  • Bring the mixture to a gentle simmer, cover, and cook for 10-15 minutes, stirring occasionally.

Serving

  • Once the beans are hot and the flavors have melded, remove from heat.

Notes
