  • 1 tbsp ketchup Introduces a slight tang and sweetness to the filling.

Preparation

  • In a pot of boiling water, cook the shrimp until tender for approximately 2-3 minutes.
  • Drain and rinse the shrimp under cold water, then drain well and towel dry.
  • In a small bowl, mix together the mayonnaise and ketchup.
  • With a sharp knife, cut the avocado lengthwise and remove the pit.
  • Carefully cut around the edges and slice to form small cubes in the avocado.
  • Place the cubed avocado in a medium bowl, add the cooled drained shrimp and the ketchup mixture, and gently mix together.
  • Add a dash or two of salt and pepper to taste.
  • Spoon the shrimp mixture into the empty avocado shells.
  • Top with the finely chopped parsley before serving.
  • Enjoy with fresh Italian crusty bread or a salad.

Notes

For best results, assemble just before serving and consider adding diced tomatoes, red onion, or spicy jalapeƱos for variations.
