Instructions
 

Preparation

  • Gather all your ingredients on a clean countertop.
  • Dice the bell peppers and onion, and mince the garlic.
  • Cut the smoked sausage into bite-sized rounds.

Cooking

  • In a large skillet, heat a bit of oil over medium heat. Add the onions and garlic; sauté until fragrant and translucent.
  • Toss in the sliced sausage and cook until golden brown.
  • Stir in the bell peppers and cook for another minute.
  • Add the rice, Cajun seasoning, and broth. Bring to a boil.
  • Reduce the heat, cover, and let it simmer until the rice is tender and absorbed the broth.
  • Add the shrimp, and cook until they turn pink and firm.

Serving

  • Gently fluff the rice with a fork.
  • Top with chopped green onions and fresh parsley.
  • Serve hot and enjoy every comforting spoonful!

Notes

This dish is great for meal prep, keeps well in the fridge for several days. You can also freeze the dish for up to 2 months. Add a splash of broth or water to loosen if too thick.
