Preparation

  • Cook the lo mein noodles according to package instructions until just tender. Drain and rinse with cold water to stop cooking; set aside.
  • Dice bell peppers, snap peas, and carrots into bite-sized pieces for even cooking.
  • Mince garlic and ginger to create a fragrant paste.
  • Ensure shrimp are peeled and deveined; thaw if using frozen shrimp.

Cooking

  • In a large pan or wok, heat vegetable oil over medium-high heat until shimmering.
  • Add minced garlic and ginger to the hot oil; cook for about 30 seconds until fragrant.
  • Toss in the shrimp and sauté for 2-3 minutes or until they turn pink.
  • Add your mixed vegetables to the pan and cook for an additional 3-4 minutes until tender.
  • Pour in soy sauce, oyster sauce, and sesame oil. Stir well to combine.
  • Toss the cooked noodles into the pan, combining them with the shrimp and sauce. Stir-fry for another 2-3 minutes until heated through.

Serving

  • Check the seasoning and add a splash more soy sauce if needed.
  • Spoon generous portions into bowls.
  • Sprinkle with chopped green onions for a fresh finish.
  • Serve immediately while it's fresh and hot.

Notes
