  • 2 cups cooked rice Use leftover rice for best results.
  • 1 pound shrimp Sweet and tender, thaw if frozen.
  • 2 tablespoons vegetable oil For sautéing.
  • 1 medium onion Diced.
  • 2 cloves garlic Minced.
  • 1 cup mixed vegetables Peas, carrots, and corn.
  • 2 large eggs Beaten.
  • 3 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon sesame oil For flavor.
  • to taste salt and pepper Essential for seasoning.
  • 2 stalks green onions For garnishing.

Instructions
 

Preparation

  • Gather all your ingredients and have them ready to go.
  • Dice the onion and mince the garlic.
  • Thaw the shrimp if frozen and pat them dry.
  • Beat the eggs in a small bowl.

Cooking

  • Heat the vegetable oil in a large pan or wok over medium-high heat.
  • Sauté the onion until it’s translucent, about 2-3 minutes.
  • Add minced garlic and shrimp; cook until shrimp turns pink.
  • Throw in the mixed vegetables and stir-fry for another 3-4 minutes.
  • Push everything to one side and pour in the beaten eggs, scrambling them until just set.

Serving

  • Add the cooked rice, soy sauce, and sesame oil to the pan.
  • Mix everything together well, allowing the rice to get slightly crispy.
  • Season with salt and pepper, then remove from heat.
  • Garnish with sliced green onions and serve hot!

Notes

Use leftover rice for best results to avoid stickiness. Customize with your favorite ingredients.
