Preparation

  • In a large bowl, add the eggs and sriracha, whisking to combine.
  • Add the panko, green onions, salt, pepper, lemon zest, and smoked paprika, mixing until well combined.
  • Incorporate the chopped shrimp and knead the mixture with your hands to evenly distribute. Form the mixture into 4 large patties.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Cook the shrimp cakes for about 3 to 4 minutes on each side until golden brown and cooked through.

Serving

  • In a small bowl, combine mayonnaise and sriracha for the spicy mayo.
  • Once the shrimp cakes are done, garnish with extra green onions and serve with the spicy mayo and lemon wedges.

Opt for fresh shrimp for the best results. Ensure the patties are compact to hold together during cooking. Serve immediately for optimal crispiness.
