  • 1 tablespoon vegetable oil Used for sautéing
  • 1 cup frozen chopped spinach Thawed and squeezed to remove excess water
  • 3 cloves garlic Pressed or minced
  • 1 small red onion Minced
  • 1 pound raw shrimp Thawed and halved
  • 1 teaspoon salt To taste
  • 1 teaspoon pepper To taste
  • 8 ounces Velveeta cheese Cubed
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup whole or 2 percent milk To achieve creamy consistency

Preparation

  • In a medium cooking pan, preheat the vegetable oil over medium heat.
  • Add the minced red onion and sauté until it becomes transparent, about 3 to 5 minutes.
  • Incorporate the halved shrimp, thawed and squeezed spinach, and pressed garlic into the pan.
  • Sprinkle with salt and pepper to taste, then cook until the shrimp turn pink, approximately 3 to 4 minutes. Set aside.
  • In a medium saucepan, heat the milk over medium heat until it’s hot but not boiling.
  • Once hot, add the cubed Velveeta and shredded sharp cheddar cheese, stirring slowly until the mixture is smooth and velvety.
  • Stir in the reserved shrimp and spinach mixture, allowing it to cook together for a couple of minutes until warmed through.
  • Transfer the dip to a serving bowl and enjoy it with your favorite tortilla chips.

Notes

For best results, squeeze excess water from the spinach and avoid overcooking the shrimp. You can experiment with different cheeses for varied flavors.
