Preparation

  • Prepare the baking pan by lining a 9x13 inch metal baking pan with parchment paper and set aside.
  • In a large mixing bowl, cream together granulated sugar, salted butter, and vanilla bean paste for 2 minutes.
  • In a separate bowl, whisk together all-purpose flour, powdered sugar, cornstarch, and salt until well combined.
  • Gradually add the flour mixture to the butter mixture in three parts, mixing well between each addition until the dough is just incorporated.
  • Transfer the dough to the prepared baking pan, pressing it evenly into the bottom, and prick the surface with a fork.
  • Chill the dough in the refrigerator for 30 minutes while preheating the oven to 325°F.

Baking

  • Bake the chilled dough in the preheated oven for 40 to 45 minutes or until the top and edges are golden brown.
  • Sprinkle granulated sugar over the top immediately after removing from the oven.
  • Allow the shortbread to cool on a wire rack before cutting into squares.

Notes

To avoid tougher cookies, avoid overmixing the dough. Ensure butter is softened for proper creaming. Chill the dough for better texture.
