Preparation

  • Chop the onion and slice the carrots.
  • Dice the potatoes into bite-sized pieces for even cooking.
  • Minced garlic will add fragrant flavor – chop finely.
  • Cut beef chuck into 1-inch cubes for quick cooking.
  • Gather all ingredients and set them within reach for efficiency.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add beef cubes and season with salt and pepper; brown on all sides.
  • Stir in chopped onions and garlic, sauté until onions are translucent.
  • Add sliced carrots, diced potatoes, tomato paste, and dried thyme; mix well.
  • Pour in beef broth and add a bay leaf; bring to a simmer.
  • Cover and let it cook for 1.5 to 2 hours, stirring occasionally until beef is tender.

Serving

  • Check the seasoning and adjust salt and pepper to taste.
  • Remove the bay leaf and discard.
  • Serve hot in bowls, garnished with fresh herbs if desired.

Notes

Don't overcrowd the pot while browning the beef to avoid steaming. Simmering the beef long enough ensures tenderness and flavor absorption. Taste and adjust seasonings before serving.
