Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef until no longer pink.
  • Drain excess grease and set beef aside.
  • In the same skillet, sauté onion and bell pepper until soft.
  • Add garlic and cook for another minute until fragrant.

Cooking

  • In a large mixing bowl, combine the cooked beef, sautéed veggies, rice, diced tomatoes, tomato sauce, beef broth, and all seasonings.
  • Stir until everything is well mixed.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • Cover with foil and bake for 25 minutes.

Serving

  • Remove foil, stir gently, and sprinkle cheese on top.
  • Bake uncovered for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let sit for 5 minutes, then serve warm.

Notes

Meal prep friendly! Great for leftovers, and can be frozen for up to 3 months. To reheat, warm in the oven or microwave.
