  • Combine sugar and water. Stir together the sugar and water in a small pot or heavy-bottomed saucepan over medium-high heat.
  • Cook without stirring. Allow the mixture to cook without stirring until the sugar melts completely and turns a deep amber color, about 8 to 10 minutes.
  • Swirl gently. You can gently swirl the pot if needed to prevent the sugar from clumping.
  • Add heavy cream. Immediately whisk in the warm heavy cream once the sugar reaches a deep amber color, being cautious as the mixture will bubble intensely.
  • Simmer briefly. Allow the sauce to simmer for about 2 minutes after the bubbling subsides.
  • Incorporate butter and salt. Remove from heat and whisk in the butter and sea salt until well combined.
  • Cool and serve. Let the sauce cool for a few minutes before transferring to a bowl or jar. Serve warm.

Notes

When making salted caramel sauce, ensure your ingredients are prepped ahead of time, especially the cream, so it’s warm when you need it. Avoid stirring the sugar while it cooks to prevent clumping.
