Instructions
 

Preparation

  • Boil a large pot of salted water over high heat.
  • Chop the red onion, cherry tomatoes, and fresh basil.
  • Slice the black olives and mozzarella balls.
  • Dice the salami into bite-sized pieces.
  • Once the water is boiling, add the cheese tortellini and cook according to package directions, about 3-5 minutes until al dente.

Cooking/Assembling

  • Drain the tortellini once cooked and rinse under cold water.
  • In a large mixing bowl, combine the drained tortellini, diced salami, halved mozzarella balls, chopped tomatoes, sliced black olives, and red onions.
  • Add the chopped fresh basil, olive oil, and red wine vinegar. Season with salt and pepper to taste.
  • Toss gently until all ingredients are well-coated with the dressing.
  • Let the salad sit for about 10 minutes to allow flavors to meld.

Serving

  • Transfer the salad to a serving bowl or individual plates.
  • Garnish with additional fresh basil if desired.
  • Serve chilled or at room temperature.

Notes
