Instructions
 

Preparation

  • Shred the leftover rotisserie chicken into bite-sized pieces.
  • Wash and dry the crisp lettuce thoroughly.
  • Slice cherry tomatoes in half and chop cucumbers into bite-sized pieces. Set aside.
  • Crumble the feta cheese into manageable pieces.
  • Chop your chosen herbs finely.

Assemble

  • In a large mixing bowl, combine the shredded rotisserie chicken, lettuce, cherry tomatoes, and cucumbers.
  • Add the crumbled feta cheese and chopped herbs to the bowl.
  • Drizzle fresh lemon juice over the salad, followed by a sprinkle of salt and pepper.
  • Gently toss the salad until all ingredients are evenly coated.
  • If desired, fold in avocado and nuts for extra flavor and nutrition.

Serve

  • Transfer the salad to a serving platter or individual bowls.
  • Garnish with additional herbs or a slice of lemon, if desired.
  • Serve immediately or store for later enjoyment.

Notes

Great for meal prep! Leftovers will last 3 days in the fridge. Avoid mixing dressings until you’re ready to serve to prevent sogginess.
