Preparation

  • Boil a large pot of salted water over high heat. Add the elbow macaroni and cook until al dente, about 8-10 minutes.
  • Chop the red bell pepper, green bell pepper, red onion, celery, and dill pickles into small, uniform pieces.
  • In a separate bowl, mix the mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth. Set aside.

Cook/Assemble

  • Once the macaroni is cooked, drain it and rinse under cold water to halt the cooking process.
  • In a large mixing bowl, combine the cooled macaroni with the chopped vegetables and the prepared dressing. Mix gently until everything is evenly coated.
  • Add the shredded cheddar cheese and stir until well distributed throughout the salad.

Serve
