Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the peaches thoroughly, halve them, and remove the pits.
  • In a baking dish, place the peach halves cut-side up.
  • Drizzle olive oil over each peach half and sprinkle with salt and pepper.

Cooking & Assembling

  • Roast the peaches for about 15-20 minutes until golden brown and caramelized.
  • While the peaches roast, combine the mixed greens in a large bowl.
  • Once the peaches are done, let them cool slightly, then chop and add them on top of the greens.
  • Add shelled pistachios over the salad.
  • Spoon dollops of ricotta cheese on top, followed by a drizzle of honey.

Serving

  • Drizzle the salad with additional olive oil and season with salt and pepper to taste.
  • Gently toss the salad to combine, then serve immediately.
  • Garnish with extra pistachios and a light drizzle of honey as desired.

Notes

For best results, use ripe peaches for sweetness. This salad can be served warm or chilled. Keep the dressing and toppings separate for meal prep to maintain freshness.
