  • 2 cups cherry tomatoes Sweet and juicy, the star of the sauce.
  • 1 tbsp sugar Enhances the natural sweetness of the tomatoes.
  • 2 tbsp balsamic vinegar Adds tangy depth to the flavor.
  • 1 small onion Introduces savory sweetness.
  • 1 small red bell pepper Adds sweet crunch and color.
  • 4 cloves garlic Roasted until sweet and creamy.
  • 2 tbsp olive oil For roasting and richness.
  • 1 tsp salt Enhances the flavors.
  • 1/2 tsp black pepper Adds warmth and spice.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine cherry tomatoes with sugar, balsamic vinegar, olive oil, salt, and black pepper. Stir to combine.
  • Pour the mixture onto a baking sheet or casserole dish. Nestle in the piece of bell pepper and onion.
  • Place the garlic cloves (with the skins on) in the middle of the baking sheet.

Cooking

  • Drizzle a little more olive oil over the vegetables and season with salt and pepper.
  • Roast at 400 F for about 45 minutes until tender and caramelized.

Serving

  • Remove from the oven and allow to cool slightly.
  • Remove the garlic from the pan and transfer the remaining contents to a blender.
  • Squeeze the garlic pulp from the skins into the blender.
  • Blend the mixture until smooth.
  • Transfer into jars with lids and store in the fridge for up to five days or freeze for up to six months.

Notes

Use ripe cherry tomatoes for best flavor. Don't skip the roasting time for enhanced sweetness. Adjust seasoning as needed after blending.
