For the Compound Butter

Preparation

  • Pat the steaks dry with paper towels and sprinkle kosher salt evenly over all sides, then refrigerate uncovered on a wire rack for 8 hours or overnight.
  • In a bowl, mix softened butter with minced garlic, chopped rosemary, thyme leaves, kosher salt, and cracked black pepper to make the compound butter.
  • Roll the butter mixture into a log using plastic wrap and refrigerate.

Smoking and Searing

  • Set your smoker to 225 degrees F and season the steaks with cracked black pepper and garlic powder.
  • Smoke the steaks until the internal temperature reaches 100 degrees F, which takes about 45 minutes to 1 hour.
  • Increase the smoker or grill temperature to maximum (450-500 degrees F) and rub oil on both sides of the steaks.
  • Place the steaks on the grill and sear until the internal temperature reaches 125 degrees F for medium-rare, flipping every 4 to 5 minutes, for about 8 to 12 minutes total.
  • Transfer the steaks to a cutting board, place a slice of the compound butter on each steak, cover with foil, and let rest for at least 15 minutes before slicing against the grain and serving.

Notes

Use a meat thermometer for perfect doneness. Letting the steaks rest is crucial for retaining juices. Customize the compound butter with different herbs or spices as desired.
