Main Ingredients

  • 2 3/4 cups chopped red bell peppers The primary flavor base of the jelly, providing sweetness.
  • 1 medium jalapeno pepper Adds a spicy kick to the sweet jelly.
  • 4 cups granulated sugar Sweetens the mixture, balancing the heat of the peppers.
  • 1 cup apple cider vinegar Contributes tanginess and helps in preserving the jelly.
  • 1 pouch liquid pectin Essential for thickening the jelly to the right consistency.

Instructions
 

Preparation

  • Remove seeds and stems from peppers and roughly chop into 1-inch pieces.
  • Place peppers in a food processor and pulse until very finely chopped, but not yet pureed.
  • Measure out 2 & 3/4 cups of this pepper mixture.

Cooking

  • In a medium Dutch oven, combine the chopped peppers, sugar, and vinegar.
  • Bring mixture to a full rolling boil that can't be stirred down, and boil for 1 minute.
  • Quickly stir in the pectin and return to the full rolling boil for exactly 1 minute.
  • Remove the pot from the heat and skim off any foam that forms on the surface.

Jarring

  • Ladle the jelly into clean jars and cool to room temperature.
  • Seal the jars with their lids. You can use right away or store for later.

Notes

To ensure the jelly turns out perfectly, use fresh peppers, be precise with measurements, and follow proper canning guidelines.
