Preparation

  • Chop, mince, or shred the red cabbage to your desired texture and place it in a large mixing bowl.
  • Toss the cabbage with apple cider vinegar. If using honey, whisk it into the vinegar before adding it to the cabbage.
  • Sprinkle kosher salt, ground black pepper, and olive oil over the cabbage mixture and toss to combine everything evenly.
  • Cover the bowl and refrigerate for anywhere from 1 hour up to 24 hours to allow the flavors to meld.
  • Just before serving, give the slaw another toss and drain excess liquid if necessary.

Notes

For optimal freshness, store in an airtight container in the refrigerator. Best consumed within the first 1-2 days. Consider adding nuts, seeds, or dried fruits for a unique twist.
