Preparation

  • Gather all ingredients and kitchen tools including a pot and stirring spoon.
  • Chop the andouille sausage, onion, and green bell pepper into small pieces for even cooking.
  • Rinse the kidney beans to remove excess sodium.
  • Set up your workspace for efficiency while cooking.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the andouille sausage and brown for about 3-4 minutes until slightly crispy.
  • Stir in the chopped onion and green bell pepper, cook until softened, about 5 minutes.
  • Mix in minced garlic and seasonings, sauté for 2-3 minutes until fragrant.
  • Add the rinsed kidney beans, diced tomatoes, and beef broth. Stir well.
  • Incorporate uncooked brown rice, bring mixture to a boil.
  • Once boiling, lower heat, cover, and let simmer for 45-50 minutes, or until rice is tender.

Serving

  • Stir the pot, taste, and adjust seasonings as necessary.
  • Remove from heat and let it sit covered for about 5 minutes.
  • Scoop the red beans and rice into bowls and drizzle with hot sauce if desired.

Notes

For vegetarian version, replace andouille sausage with smoked tempeh. Store leftovers in an airtight container for up to 4 days. Freezing is possible for up to 3 months.
