Preparation

  • Rinse the fresh raspberries gently under cold water and set aside to drain.
  • In a small bowl, combine water and gelatin (if using), sprinkling the gelatin over the water. Let it sit for about 5 minutes until it blooms.
  • In a separate bowl, whip the heavy cream until soft peaks form, about 3-5 minutes. Keep it chill.

Cooking/Assembling

  • In a large mixing bowl, combine the fresh raspberries, sugar, vanilla extract, and lemon juice.
  • Gently fold in the whipped cream until fully incorporated, maintaining the airy texture.
  • If using gelatin, heat the bloomed gelatin in the microwave for about 10 seconds until fully dissolved; then fold it into the mousse mixture.

Serving

  • Transfer the mousse into serving dishes, filling them generously.
  • Chill the mousse in the refrigerator for at least 1 hour, allowing it to set.
  • Before serving, top with additional raspberries or a dollop of whipped cream for an extra touch.

Notes

Use chilled mixing bowls for whipping cream to achieve better volume. Store leftovers in airtight containers to retain freshness and creaminess.
