Instructions
 

Preparation

  • Start by boiling a large pot of water. Add the whole wheat pasta and cook it according to the package instructions, aiming for an al dente texture, usually about 8-10 minutes.
  • While the pasta cooks, chop the veggies: slice bell peppers, julienne carrots, and shred the cabbage.
  • In a small bowl, whisk together the peanut butter, soy sauce, lime juice, sesame oil, honey, chili garlic sauce, ginger, and minced garlic until smooth.

Cooking/Assembling

  • Drain the pasta and rinse with cold water to stop the cooking process.
  • In a large mixing bowl, toss the cooked pasta with the sauce you just made, ensuring everything is well coated.
  • Add in the chopped veggies and mix until evenly distributed.

Serving

  • Transfer the noodles to serving bowls. Garnish with fresh cilantro and extra shredded cabbage if desired.
  • Serve immediately for the best flavor experience!

Notes

For extra flavor, try toasting peanuts and sprinkling them on top before serving. Store leftovers in an airtight container for easy lunches throughout the week.
