Preparation

  • In a pot, combine apple cider vinegar, filtered water, sea salt, sugar, and peppercorns. Add any additional seasonings if desired.
  • Stir the mixture and bring to a boil over medium heat for 2 minutes.
  • Add sliced red onions to the boiling brine and let boil for an additional 1 minute.
  • Remove from heat and let the mixture cool for 1 minute.
  • Pour the cooled brine and onions into a mason jar large enough to fully cover the onions.
  • Add lime slices to the jar and swirl gently to mix everything.
  • Allow the mixture to cool completely to room temperature.
  • Enjoy immediately or let them sit for a few hours or days for enhanced flavor.

Notes

Use firm, fresh red onions for the best crunch. For a milder taste, soak the onions in cold water before pickling. Experiment with different vinegars and spices for unique flavors. Store in a cool, dark place, ensuring the jar is sealed tightly.
