Essential Ingredients

  • 3 medium carrots, scrubbed and trimmed
  • 1 teaspoon mustard seeds (optional) Adds crunch and flavor
  • 3/4 cup water
  • 1/2 cup apple cider vinegar or distilled white vinegar
  • 2 teaspoons cane sugar
  • 3/4 teaspoon kosher salt

Instructions

Preparation

  • Place each carrot flat on a work surface and, using a vegetable peeler, slice into long, thin ribbons.
  • Gently place the carrot ribbons into a clean 1-pint mason jar. If using mustard seeds, sprinkle them in.
  • In a heatproof measuring cup, combine the water, vinegar, sugar, and salt. Heat until everything dissolves.
  • Carefully pour the hot pickling liquid over the carrot ribbons, ensuring they are completely covered.
  • Cap the jar and allow it to sit at room temperature for about 20-30 minutes.
  • Enjoy immediately or refrigerate for up to two weeks.

Notes

For added flavor, consider using dill, coriander seeds, or chili flakes in the pickling liquid. Taste as you go to adjust sweetness or acidity.
