Preparation

  • Gather all ingredients and tools. Prepare a large mixing bowl and frying pan.
  • In the mixing bowl, combine corn kernels, flour, sugar, baking powder, eggs, and heavy cream. Stir until just combined; don’t overmix!
  • Let the batter rest for about 5 minutes.

Cooking

  • Heat a large skillet over medium heat and add vegetable oil.
  • Drop batter onto the skillet in small mounds, leaving space between each fritter.
  • Cook for 3-4 minutes on each side, or until golden brown.

Serving

  • Transfer fritters to a paper towel-lined plate to drain excess oil.
