Preparation

  • Step 1: In a large bowl, whisk together the eggs, coconut sugar, vanilla extract, and pumpkin puree until smooth.
  • Step 2: In a separate bowl, mix the gluten-free flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • Step 3: Add the dry mixture into the bowl with the wet ingredients and stir until combined.
  • Step 4: Pour the batter into a lined 10 by 15-inch jelly roll pan and spread it evenly.
  • Step 5: Bake in a preheated oven at 350°F for 12-13 minutes until just set.
  • Step 6: Remove the cake from the oven and immediately cover with another baking pan or foil to keep it moist.
  • Step 7: While the cake is warm, gently roll it from the short end and wrap it with foil to maintain its shape.
  • Step 8: In a mixing bowl, whip together the cream cheese, powdered sugar, vanilla extract, and softened butter until smooth.
  • Step 9: After the cake has cooled for about an hour, gently unroll it and spread the cream cheese filling evenly on top.
