  • 2 cups fresh spinach or bok choy Adds nutrients and color.
  • 2 tbsp soy sauce Infuses umami flavor.
  • 1 tsp sesame oil Adds a nutty aroma.
  • 2 green onions chopped (for garnish) For a fresh finish.

Preparation

  • Gather all your ingredients and chop the green onions, garlic, and ginger.
  • Rinse the spinach or bok choy to clean, then roughly chop it if needed.

Cooking

  • In a large pot, bring the chicken broth to a boil over medium-high heat.
  • Once boiling, add the dumplings and allow them to cook according to package instructions.
  • Stir in the minced garlic and grated ginger, and reduce heat to a simmer.
  • Add the soy sauce, sesame oil, and greens to the pot.
  • Let everything simmer for another 2-3 minutes until the greens are wilted and the dumplings are warm.

Serving

  • Ladle the soup into bowls.
  • Top with chopped green onions for a fresh crunch.

Notes

For best results, sauté garlic and ginger before adding broth for deeper flavor. This soup is excellent for meal prep and can be stored for up to 3 days in the fridge or frozen for 3 months.
