Preparation

  • Bring a large pot of water to a boil and score the bottom of each tomato with an 'X'; blanch for about 30 seconds.
  • Remove the tomatoes and immediately place them in an ice bath to cool quickly.
  • Once cooled, peel off the skins and chop each tomato into 3-4 parts for a smoother sauce texture.

Cooking

  • In a large skillet or saucepan, warm the olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 5-7 minutes.
  • Incorporate the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Stir in the chopped fresh or canned tomatoes and cook for about 10-15 minutes until they break down and release their juices.
  • Add salt and freshly ground black pepper to taste, then sprinkle in the sugar to balance the acidity.
  • Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.
  • Use an immersion blender to blend the sauce until smooth, achieving your desired consistency.
  • Stir in the chopped basil leaves and cook for another few minutes to infuse the flavors.

Serving

  • Toss the pomodoro sauce with your favorite pasta, or use it as a base for other delicious dishes.

Notes

For a smoother sauce, blend at the start before cooking. Use high-quality olive oil for flavor. Riper tomatoes yield a sweeter sauce. Consider adding red pepper flakes for heat. Let sauce cool before refrigerating for better longevity.
