  • Add the grated vegan parmesan cheese, blending thoroughly to ensure an even distribution.
  • Gradually add olive oil while blending until the mixture reaches a creamy consistency.
  • Taste the pesto and adjust seasoning with additional salt and black pepper, if desired.

To achieve the best flavor, pick fresh, vibrant basil. Consider lightly toasting the pistachios before blending to enhance their taste. Store the pesto covered in the refrigerator with a layer of olive oil on top to maintain its freshness and color.
