Preparation

  • Bring water to a boil in a pot large enough to fully cover the pistachios.
  • Boil the pistachios for 3-4 minutes.
  • Strain the pistachios to remove the water, then spread them onto a kitchen towel.
  • Remove the skins by rubbing the pistachios gently in the towel; this process can take up to 30 minutes.

Blending

  • Transfer the skinned pistachios to a food processor and begin pureeing for about 25-30 minutes.
  • Add a tablespoon or two of water as needed to help the mixture come together.
  • Scrape down the sides of the processor as needed to ensure all pistachios are evenly blended until a smooth paste forms.

Storage

  • Once smooth, store in an airtight container in the refrigerator for up to 2 weeks, or freeze for 2-3 months.
  • Thaw in the fridge before using.

Notes

To ensure the best results, use fresh pistachios and patiently puree until smooth. Avoid adding too much water at once. Storage in a vacuum-sealed container can help preserve quality.
