Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine the softened butter, brown sugar, and granulated sugar, mixing until fluffy for about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  • Gently fold in the crushed pineapple until evenly distributed.

Baking

  • Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • If desired, place a cherry in the center of each cookie.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and centers look set.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Serving

  • Once cooled, arrange cookies on a serving platter. They can be enjoyed warm or at room temperature.
  • For extra flavor, drizzle with honey or serve with a scoop of vanilla ice cream.

Notes

For best results, ensure butter is softened and not melted. Chill the dough for 30 minutes before baking for thicker cookies. Store cookies in an airtight container for up to a week.
