  • 1 cup Fresh pineapple, diced Fresh pineapple is preferred.
  • 2 tbsp Soy sauce Can substitute with tamari for gluten-free.
  • 1 tbsp Olive oil For sautéing.
  • 2 cloves Garlic, minced Use fresh garlic for best flavor.
  • 1 tbsp Ginger, minced Freshly minced for best taste.
  • 1 medium Red bell pepper, sliced Adds sweetness and crunch.
  • 2 stalks Green onion, chopped For garnish and flavor.
  • to taste Salt and pepper To season to taste.

Instructions
 

Preparation

  • Gather all the ingredients and place them on the counter.
  • Dice the fresh pineapple into bite-sized pieces.
  • Chop the red bell pepper and green onions and set them aside.
  • Mince the garlic and ginger using a sharp knife.

Cooking

  • Heat 1 tablespoon of olive oil in a large pan over medium heat.
  • Add the shrimp and cook for about 2-3 minutes until they start turning pink.
  • Stir in the minced garlic and ginger, then add the sliced red bell pepper.
  • Cook for another 2-3 minutes until the red bell pepper softens.
  • Pour in 2 tablespoons of soy sauce and add the diced pineapple. Cook for an additional 2 minutes.

Serving

  • Season with salt and pepper to taste and give it a good stir.
  • Serve warm, garnished with chopped green onions.
